Cinnamon |
Cinnamon : Cinnamon has been in the headlines recently, mostly because of its sharp price advance during recent months. So this may be an opportune time to take a closer look at one of the oldest spices known to man. There has been confusion between Cinnamon (Cinnamomum zeylanicum) and Cassia (Cinnamomum cassia) – this misunderstanding goes back over 4000 years and still exists today. Cinnamomum z. is native to Ceylon and is very mild. Cinnamomum c. is from Indonesia, China or Vietnam and has a more intense flavor and aroma. In the U.S. Cinnamomum cassia is the preferred type although the U.S. Food, Drug and Cosmetic Act officially permits the term Cinnamon to be used for both. Korintji is a higher altitude area in Indonesia where some of the better quality Cinnamomum c. is grown. In general, all our Cinnamon is from Korintji. To harvest, the bark is stripped from the trees. The higher the oil content, the better. It is the oil that determines the strength of the flavor. The best quality bark is taken from the trunk of the tree, lesser qualities from branches and broken pieces. Volatile oil content ranges from 1.5% to 4%.
Our Cinnamon is freshly ground in the U.S. A small percentage of oil is lost during the grinding process. Processors do not always clearly indicate whether the oil content they claim is before or after grinding. We will be glad to provide you with a certificate of analysis for each lot.
